Ingredients
  

Salad Ingredients

  • 1 large cucumber sliced into half-moons
  • 2 medium tomatoes chopped
  • 1/2 red onion thinly sliced
  • 1 green bell pepper sliced
  • 1/2 cup Kalamata olives pitted
  • 3/4 cup feta cheese cubed or crumbled

Dressing Ingredients

  • 1/4 cup extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • to taste salt and black pepper

Instructions
 

  • Slice the cucumber into half-moons, chop the tomatoes, and thinly slice the red onion.
  • Slice the green bell pepper into thin strips and place all the vegetables in a mixing bowl.
  • Add the Kalamata olives and crumbled feta cheese to the bowl.
  • In a small bowl, whisk together the olive oil, red wine vinegar, oregano, garlic powder, salt, and black pepper to make the dressing.
  • Drizzle the dressing over the salad and gently toss everything together.
  • Serve immediately, or let the salad sit for 10 minutes to enhance the flavors.
